Yummy Egg Chicken Roll
Pull up your sleeves and prepare yourself a yummy egg chicken roll!
It is stuffed with flavorfully seasoned & baked chicken cubes, crunchy fresh veggies, and creamy sauce. All the filling is neatly rolled up in a soft egg tortilla, making it a satisfying bite!
This yummy egg chicken roll can be enjoyed for breakfast, brunch, or a light dinner. To relish it outdoors or carry it for office lunch, pack the elements separately and assemble them right before eating.
60g | 2 packets of no rush chicken cubes
1½ Tbsp butter (softened)
½ tsp smoked paprika
¼ tsp garlic powder
½ tsp Italian dried herb seasoning blend
1 tsp salt (divided)
2 mini cucumbers (julienned)
1 red onion (sliced thinly)
1 cup lettuce (shredded)
1-2 tsp lemon juice (freshly squeezed)
¼ tsp crushed black pepper
3 Tbsp tomato ketchup
3 Tbsp mayonnaise
2 flour tortillas
2 eggs (whisked)
1 Tbsp olive oil
Set the oven for preheating at 420° F.
Begin by soaking the chicken cubes for 20 minutes in a bowl filled with water to rehydrate. After that, drain the water.
Transfer the rehydrated chicken cubes into a baking tray lined with an aluminum sheet.
Add the softened butter, smoked paprika, garlic powder, Italian herb seasoning, ½ tsp salt to the chicken. Combine well so that all the chicken pieces are coated evenly.
Place the tray in the preheated oven. Bake for 16-18 minutes at 420° F. At 8-9 mins intervals, flip the chicken pieces using tongs.
Meanwhile, prepare the stuffing. In a mixing bowl, toss the julienned cucumbers, sliced onions, and shredded lettuce with lemon juice, salt pepper. Keep aside.
In a small bowl, mix the tomato ketchup and mayonnaise until combined. Keep aside.
Heat some oil in a wide pan over a medium flame. Pour 1 whisked egg into the hot oil and swirl the pan to form a circle. Place a tortilla on top of the egg. Cook for a minute, flip, and cook the other side for a minute. Remove to a plate and prepare the second tortilla similarly.
Finally, assemble the rolls. Lay the egg tortillas (egg side up) side by side. Spread the ketchup-mayo sauce on the egg side. In each tortilla, arrange half of the baked chicken cubes and veggie stuffing slightly off-center. Roll the tortilla while tucking the stuffing inside. Enjoy!
For a spicy flavor, use harissa sauce instead of ketchup-mayo sauce.
