Author:No Rush
Ingredients
60g | 2 packets of freeze-dried chicken cubes
1 egg (whisked)
½ cup cornstarch
1 Tbsp spring onion (sliced thinly for garnishing)
1/3 cup low-sodium chicken broth
3-4 Tbsp orange juice
1½ Tbsp soy sauce
2 Tbsp white vinegar
3 Tbsp granulated sugar
A pinch of ginger powder
A pinch of garlic powder
½ tsp Sriracha hot sauce (use less or more)
1 tsp orange zest (freshly grated)
2 tsp cornstarch
Directions
Firstly, transfer the chicken cubes from the packet into a bowl. Add water to immerse all the chicken pieces fully. Let it soak for 20 minutes to rehydrate.
Meanwhile, prepare the sauce. Add the chicken broth, orange juice, soy sauce, white vinegar, sugar, ginger powder, garlic powder, hot sauce, orange zest into a small saucepan placed on the stove over medium heat. Mix well and bring the sauce to a boil while stirring regularly.
Next, whisk 2 teaspoons of cornstarch with 2 teaspoons of water until nicely combined. Reduce heat to medium-low and stir the cornstarch water into the bubbling sauce. Stir continuously until the sauce thickens, then remove from the heat.
Preheat the air fryer to 400° F.
Drain the water from the rehydrated chicken cubes. Dip the chicken cubes in the whisked egg and then coat them evenly with cornstarch.
Place the coated chicken cubes in the air fryer basket in a single layer. Also, keep a little gap between each piece.
Insert the basket into the preheated air fryer. Air fry for 12-14 minutes at 400° F or until golden and crisp. Flip at 6-7 mins intervals.
Put the crisp air-fried chicken cubes into the sauce (in the saucepan). Toss them gently to coat with the thick sauce all over.
Remove into a serving bowl. Enjoy garnished with spring onions!
Recipe Note
In case you don’t have an air fryer, you may deep fry the chicken in oil. Before dropping the coated chicken cubes in the hot oil, make sure to check (using a cooking thermometer) that the oil is 350° F. Additionally, the bright citrusy orange flavor is the highlight of the sauce, so always use fresh orange juice.
