When brainstorming easy, fuss-free, and delicious meals, “Chicken fajitas” top the list! The simplicity of the dish makes it so appealing! Along with minimal ingredients, having freeze-dried chicken cubes makes prepping a breeze. All you got to do is rehydrate the chicken, slice the veggies, season, and sauté.
Pan-fried chicken is always a winner! The spicy and earthy seasonings coating the chicken add a flavorful twist. The colorful chewy tender bell peppers offer a sweet and sharp taste. Lime juice incorporates a fragrant fresh tang, a highlight of Mexican cuisine!
This vibrant dish works both as a snack and a light meal. You can stuff it in tortillas with pico de gallo and sour cream. Toss the chicken fajitas with green leafy veggies, sweet corn kernels, avocado, and beans for a filling salad bowl. You can also serve it as a side dish with steamed rice!

Ingredients
120g | 4 packets of No Rush freeze-dried chicken cubes
1 onion (sliced)
1 red bell pepper (de-seeded & sliced)
1 green bell pepper (de-seeded & sliced)
1 yellow bell pepper (de-seeded & sliced)
2 tsp smoked paprika
1½ tsp cumin powder
1 tsp garlic powder
½ tsp dried oregano
Salt and pepper (to taste)
2 Tbsp vegetable/avocado oil
1-2 tsp lime juice (freshly squeezed)
Directions
Open the packets and transfer the freeze-dried chicken cubes into a bowl. Pour some water and set aside to rehydrate for 20 minutes.
Meanwhile, combine the paprika, cumin powder, garlic powder, oregano, salt & pepper in a mixing bowl.
Pat dry the rehydrated chicken cubes and toss them with the seasoning mix. Ensure to coat all the chicken pieces evenly.
Heat the avocado oil in a wide cast iron pan at medium-high heat.
Add the spice-coated chicken cubes and cook for 7-10 minutes. Stir frequently. Then, remove it into a dish.
Add the sliced onion and bell peppers into the pan. Stir fry for 4-5 minutes and turn off the stove.
Place the cooked chicken cubes into the pan. Drizzle the lime juice and toss well. Enjoy warm!
Recipe Note
Transfer the leftover chicken fajitas into an airtight container and store it in the refrigerator to last up to 5 days.
